Shopify does a decent job with Product schema โ price, availability, ratings appear in Google Shopping results automatically. What it does not do is Organisation schema, LocalBusiness schema for stores with physical locations, SoftwareApplication schema for SaaS products sold through Shopify, or AEO fields for AI search engines.
